A few weeks ago I saved another Too-Good-To-Go bag and it included two Belgian endives. Back in my childhood we had them quite often. I guess it was the only thing available in the GDR besides butterhead lettuce. I didn’t much like them due to the bitter taste. But my taste buds have evolved – I like bitter now. I always wondered if I should give chicory – as we call it – another try. After looking at some recipes on Pinterest I decided to make Belgian Endive Grapefruit salad. Here is my recipe if you want to recreate.

Ingredients

  • 2 head of Belgian endive
  • 1 grapefruit
  • sour cream about 2-4 table spoons
  • almond slices
  • salt

How to throw together a Belgian Endive Grapefruit Salad:

Do I really need to tell you how to do it? Probably not.

  1. Slice chicory – I cut the heads lengthwise twice and then just cut down from the top. I am all for being quick.
  2. Peel grapefruit and filet. I basically just pulled it all out of the skin and crumbling it up over my salad bowl.
  3. Add salt – and I can’t remember if I added a bit of olive oil – toss.
  4. Serve with a few spoonfuls of sour cream and top with almond slices. I ate some salted crackers along with it.

This salad is really kicking your bitter taste buds. If you don’t like bitter this is probably not for you. Even though the sour cream is tuning a down a bit.

    Wow – this sounds like such a fun combination of flavors and textures!

    If you are ever looking for another way to enjoy endive: I like to put a dollop of goat cheese on a leaf and top it with walnuts and balsamic glaze! So yummy!

      Oh yes i can see endive and goat cheese work well together. Maybe even baked in the oven…

    I guess I call it endive, I had no idea it was the same thing. I like bitter, but generally am not a big fan of endive in a salad. I like it as an appetizer with some bleu cheese, where the endive is like a little bowl to hold the cheese. Delicious. I love grapefruit, though.

      I am not a fan of blue cheese as it is so strong in taste. Paired with endive I am not sure my taste buds are it capitulating. I never add endive to the regular salad. However when I buy pre tossed there is endive -what we call endive – in. It’s also bitter but red. Grapefruit is such an underrated fruit.

    This salad sounds wonderful! I do like bitter tastes, and I love grapefruit. I’ve never tried chicory! I’m not very adventurous!

      If you like bitter and Grapefruits this might actually be your thing. I think you could also add some honey or sugar if it is too much.
