KAALILAATIKKO – Finnish Cabbage Casserol

It’s our anniversary today. Eleven years married and twenty years together this summer. While we are enjoying our annual anniversary trip I invite you for a dinner.

As tradition has it I’ve been celebrating our anniversary on the blog with a Finnish recipe. Why Finnland you may ask. Well we received a surprise honeymoon trip to Finnland for our wedding and I love to relive that week, learn more about the culture and the dishes.

Here are the ingredients:

  • 1-2 cups of diced, cooked potatoes
  • olive oil
  • 400g ground beef
  • 1 medium onion, chopped
  • 2-3 cups of cabbage (I used savoy what I had in the freezer from this recipe), sliced and chopped
  • 2 tbsp maple syrup
  • salt & pepper, to taste
  • 250 ml broth – I used veggie but if I had it would have been beef

Let’s get cooking

  1. Dice potatoes. I had small ones quarters ere find. Didn’t peel either. Cook rice as you usually would until almost done.  Set aside.
  2. Preheat oven to 400’F. 
  3. Put oil in pan and add beef, onions and 1/2 teaspoon of salt.  Cook until meat is completely browned. Once done I transferred meet into a bowl.
  4. Use the same pan to cook cabbage. Didn’t need any more oil or fat this way. If cabbage gets stick add a bit of water or broth.
  5. Once done add cabbage to the meat and add diced potatoes. Season with salt and pepper and add the maple sirup. Mix well.
  6. Pour into your casserole dish.
  7. Bake for 30-45, until golden brown on top.  Cover with foil if top is getting overly brown.

Here you can see the previous recipes in case you are interested. I can recommend them all. Like Pannakakku will be on the menu when we come back from our trip. The husband is a fan. And I really need to make the salmon soup. It is so so good.

    Happy anniversary, Tobia! It’s wonderful that you have a tradition of Finnish food, and the cabbage casserole looks amazing. Everything you posted looks amazing—I would have a hard time choosing, but probably a dessert!

    First, Happy Anniversary.
    Second, I LOVE this tradition. I think it’s so cool to try something different but it has a clear and romantic link to your relationship.
    I hope you have a wonderful day reminiscing and enjoying delicious (Finnish or otherwise) food.

    And that casserole sounds delicious and like the "casserole" version of the soup that I've been making :) Thanks for sharing. I'll definitely give this a try. We love cabbage around here!

      It’s really good. The original recipe uses rice instead of potatoes but they needed to be used. Enjoy if you make it.

      It a fun way to remember our honeymoon for sure.
      It’s not that I serve the dishes on our anniversary but close to it in order to write the new blogpost. And some dishes make it an appearance over and over. The Panakakku is a favorite. And I should do the salmon soup soon. It’s so good.

    Happy Anniversary Tobia. I have never had Finnish food, but this dish looks yummy and easy. I have added it too my recipes to try. We don’t have any anniversary traditions, although I do like to go out for dinner and on major anniversaries we have done some fantastic trips just the two of us.

      It’s a little blog tradition I have started. Not sure the husband has recognized it as a tradition even though he knows it’s happening that well eat some Finnish foods around the date.
      Trips on anniversaries are the best. Where have you been? Dinners out are also great.

        For our 10th anniversary, we went to Lord Howe Island, 20th we went to Vietnam and 25th we hiked the Overland Track in Tasmania.
