I set out to eat more salads in the month of July and August. And I can say I did eat quite a few. I also ventured out and tried some of the recipes I gathered in my starting post. But I also made some salads I have been recommended. I didn’t manage to try everything I wanted though. But since temperatures are very high in the coming weeks I will continue the challenge into September. Because I am also continuing my ice cream eating frenzy. However I want to recap my summer salad challenge already. Maybe it inspires you to try one or two salads yourself. And I know for some of you summer is just starting. So let’s have a look.

My Summer Salads in July

This is the salads I ate in July.

  • Standard salad – twice or more
  • Cottage Cheese Egg Salad – good, tasty, will do again
  • White Bean Salad – basically my standard salad with added beans – love it
  • Red Pepper Potato Salad – re-discovered salad. Need to do more often
  • Belgian Endive Grapefruit Salad – interesting, different, will do again but needs right timing
  • Radish Pods Salad – basically a garden salad from own harvest – loved it will do again with fresh pods
  • Chopska Salad – a family staple with feta, peppers, cucumbers. Should I post a recipe?
  • Cottage Cheese Tomato Salad – favorite, quickest, recipe below
  • Mediterranean Potato Salad – new to me salad. Will do again. Loved it

My Summer Salads in August

This is the salads I ate in August.

  • Caprese Salad – favorite, quickest, recipe below
  • Apple Kohlrabi Salad – new to me salad, interesting, needs adaption. will do again.
  • Mom’s Potato Salad – rarely do this myself, was not as good as moms
  • Red Beet Trout Salad with capers – rosolli inspired, loved it, very earthy taste, will do again
  • Tomato Salad – favorite, quickest, recipe below
  • 2x San’s Tuna Arugula Salad – loved it, will do again
  • Mango Mozarella Salad – husband loved it, was ok for me, will do again, perfect with chicken
  • Cucumber Salad – staple when having fish fingers
  • Noodle Salad – gift from the neighbor, heavy on mayonnaise, bland, hopefully not again
  • Red Pepper arugula salad with baked feta – new to me creation, baked feta was good, will do again
  • Broccoli Blueberry Poppyseed Salad – awful. Raw broccoli is the worst. I managed to eat it but I still haven’t gotten rid of the taste.
  • Juli’s Avocado and Grapefruit Salad – very good, great taste, will definitely do again
  • Tomato Bread Salad with Burrata – was good, doesn’t need the burrata
  • Pesto Cheese Arugula Salad – left over salad I tossed together. Was good.
  • Green Bean Potato Salad – I liked it a lot the husband thought it could use more seasoning. Best with steak. Will do again.
  • Cilantro Black Bean Salad – favorite, summery, will do again

Easy Peasy Summer Salad Recipes

I have a few recipes for very quick salads that are a staple in my kitchen. They are so easy that I feel like writing down a “recipe” is not necessary but I want to let you know anyways. Try these – if you like tomatoes. Because they are included in all of them. Ha!

My favorite Tomato Salad

Only 4 ingredients – dice tomatoes, add onions (spring or regular), salt and pepper. Toss. Done.

My Quick Cottage Cheese Tomato Salad

Only 4 ingredients – dice tomatoes, add package of cottage cheese, salt, pepper. Toss. Done.

My go to Caprese Salad

Only 7 ingredients – dice tomatoes, dice mozzarella, salt, pepper, olive oil, balsamic vinegar, fresh basil. Toss. Done.

    I have been loving cottage cheese lately, but tend to add fruit and/or peanut butter and pumpkin seeds. I should try adding veggies and making it savoury.

    I haven’t been eating many salads lately, but have loved potato salad when we’ve had it. We made it twice and it was amazing. Probably my favourite salad of them all, though a bit labour intensive.

    What a cool idea. Love all the pictures you captured as well! So colourful.

      Oh… I’ve never eaten cottage cheese with fruit. Isn’t it interesting that it’s been used so differently? I love a good potato salad but I agree it’s more work and best done the day prior. I am rarely that organized…

    You’ve got an amazing list of salads, Tobia! Summer is a perfect time for salads, and I’ve enjoyed many of them—but I’m not as adventurous as you are! I mainly have a salad of lettuce, tomatoes, olives, sunflower seeds, and shredded cheese, and I love to use cottage cheese as the dressing. Your cottage cheese tomato salad looks delicious.

      I tend to do the same salads over and over but save up so many recipes. This was my attempt to step out of my comfort zone and try something new. I love seeds in my salad too. I’ve never done a cottage cheese dressing. How do you do that?

    When I get fresh tomatoes from the farmers’ market, one of my favorite ways to eat it is with cottage cheese, salt, and pepper. SO GOOD. I need to go get some tomorrow, the grocery store tomatoes are not nearly as good.

      I’ve had that salad with mom’s tomato’s I was allowed to harvest when my parents were on vacation. It was soo good.

    I basically made the same variation of three salads over and over again, but they were delicious and I never regretted eating one!

    Love, love all these different salads. I definitely ate a lot this summer. I am glad you loved the arugula-tuna salad… and tomato salad and Caprese are also two of my favorites! :)
